Chickpea Salad

chickpea saladWhen the thermometer is in the 90’s and creeping to 100, you want to avoid the oven and stove at dinner.  Here is a tasty and nutritious summer salad sure to please!

Our son Jacob is into eating healthy, so I googled chickpea heathy facts for this recipe.  You will be happy to know that according to The World’s Healthiest Foods,
“Garbanzo beans are an excellent source of molybdenum and manganese. They are also a very good source of folate and copper, as well as a good source of dietary fiber, phosphorus, protein, iron, and zinc.” Mix those nutrients with some tasty veggies and seasonings, and you have a fresh, delicious dinner!

Ingredients:
2 (19 oz) cans garbonzo beans drained and rinsed
1 cucumber, peeled, seeded and chopped
1 mini red pepper, chopped
1 stalk celery, chopped (optional)
1/4 red onion, chopped
1/3 cup mayo or dairy-free yogurt
2 Tablespoons fresh lemon juice
2 teaspoons dry dill weed
salt and pepper
fresh spinach leaves or pocket bread

Putting it together:
Put chickpeas (garbonzo beans) in a bowl and mash slightly with a fork.  Add veggies, mayo, lemon juice and seasonings. Cover and chill in frig until ready to eat. Serve in pita pocket bread or on a bed of fresh spinach (my gluten-free favorite), with a side of fresh fruit and a tall glass of lemonade or ice tea.  Your summer evening is set!

Kidney Bean Burgers

One of the yummiest and easiest burgers I’ve made recently, this kidney bean burger recipe is a keeper!  It starts with canned kidney beans, cutting the cook time of other recipes.  Kidney beans have a natural sweetness, are packed with protein, and their red color is reminiscent of real burgers on the grill.  Keep this recipe handy for your Memorial Day weekend and summer cookouts!

Ingredients:

1 cup dairy-free plain yogurt
1/4 cup green onions, chopped
1/2 teaspoon oregano
1/4 teaspoon salt

2 cans kidney beans, drained and rinsed
2 slices gluten-free bread, toasted and cubed
1/2 cup green onion, chopped (the rest of your bunch)
1/2 teaspoon garlic powder
dash cayenne pepper
dash pepper
2 eggs, beaten
olive oil

Combine the yogurt, green onions, oregano and salt in a small bowl.  Cover and chill in frig.

In a stand mixer, mash the kidney beans.  Add the bread crumbs, green onion, garlic powder, cayenne, pepper, and eggs.  Mix well, until it is a good paste-like consistency.

Prepare a grill mat by coating with olive oil. Spoon the burger mixture into 8 patties on the grill mat.  Grill approximately 8 minutes per side.  Serve kidney bean burgers topped with the yogurt sauce and your favorite burger toppings.   With sides of veggies, chips and watermelon, you are set for a summer cookout!

Cereal Bars (GF & DF)

… And it was like white coriander seed, and the taste of it was like wafers made with honey. Exodus 16:31 (NKJV)

You might have to guard these delicious bars. They disappear quickly at our house!

Lightly grease a 9×13″ pan with coconut oil.

In a large sauce pan combine:
1 cup honey
1 cup Stevia powder
Cook over medium heat, stirring constantly.  When mixture boils, remove from heat. Add,
1 cup organic almond butter and mix well.
Quickly stir in
6 cups Gluten-Free Puffed Rice, coating them evenly.
Spread the cereal mixture into the prepared pan and let rest for 30 minutes.

Optional, while the bars are cooling, melt
1 package (about 1 1/2 cups) Enjoy Life  or Lily’s chocolate chips.  Spread this over the cereal.  Place the pan in the refrigerator, allowing the chocolate to firm up a bit.

Remove from refrigerator and slice into bite-size bars.  Your Valentines will love these!

Split Pea Soup (GF and DF)

Here is a wonderful crock pot recipe to warm you on a cold winter’s day. Just put it together at breakfast time, and it will be waiting for you at supper time!

In a large crock pot, combine:
6 cups or so water
2 cups dried split peas or lentils
2 cups diced celery
2 cups diced carrots
1 red onion, diced
1/4 teaspoon thyme
1/4 teaspoon garlic
1/2 teaspoon dry mustard
1 1/2 teaspoons salt
1 bay leaf

Cook on high for 8 hours. Before serving, ladle 2 cups of the soup into a blender, blending until smooth. Pour the blended soup back into the crock pot. For an extra touch, add:
1/4 cup molasses and juice from 1/2 a lemon. Serve with rice crackers and fruit salad. Delicious!

Coconut Cake, Gluten-free and Dairy-free

When birthdays come around, it’s always tricky to find a cake for those with allergies. Here is a delicious version of a Gluten-Free Mama cake, that I’ve modified to be dairy-free. Your family will love this birthday cake!

Oil a Bundt cake pan with coconut oil and dust with coconut flour. Set aside. Preheat oven to 350 Degrees.

In a medium mixing bowl, combine and set aside:
1-1/2 cups Gluten-Free Mama Coconut flour
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon xanthan gum

In a stand mixer, combine:
1/2 cup coconut oil, melted
1 1/4 cups sugar
2 teaspoons vanilla

While mixer is running, add:
4 egg whites, one at a time

Now alternate adding flour mixture and:
3/4 cup coconut or soy milk
until all are mixed together.

Slowly blend in
1 cup shredded coconut

Spoon batter into prepared Bundt cake pan and bake for 40 minutes at 350 degrees. Remove http://buylevitra.net cake from oven and let cool in pan on cooling rack. When cool, carefully remove from the pan, using a plastic knife to loosen, if needed.

Now for the yummy frosting:
In a sauce pan, combine:
1/3 cup sugar
1 Tablespoon cornstarch
Then add:
3/4 cup coconut or soy milk
Cook over medium heat, stirring constantly until boiling.
Remove pan from heat and add:
1 Tablespoon coconut oil
3-4 ounces dark chocolate (1 cup Enjoy Life chocolate chips, or 1 Endangered Species dark chocolate bar)
1 cup shredded coconut
Mix frosting well and spread it evenly on the cake. Enjoy!

Gluten-Free Pizza

Our favorite Sabbath night activity is pizza and a family movie, often The Chosen. With restaurant prices as they are these days, it makes “cents” to whip up your own pizza at home. And this pizza tastes better than any gluten-free restaurant pizza I’ve found!

Get started about 1-1/2 hours before you want to eat.

In an electric mixing bowl, combine these dry ingredients:
3 cups brown rice flour
3 cups tapioca or arrowroot flour
1/2 cup corn meal
1/2 cup quinoa or millet flour
1/2 cup ground seed blend (sunflower, pumpkin, sesame or flax)
2 teaspoons salt
4 Tablespoons active dry yeast (leaven, we had to pause this while fighting candida, see Cauliflower Pizza recipe for an alternative)
2 Tablespoons honey or monk fruit
Blend together until well mixed.

In a measuring cup, combine:
3 cups warm water
1/4 cup olive oil
4 eggs or 8 egg whites (pasture-raised, free-range local fresh eggs!)
(use additional flax seed and water if you want to make this egg-free)
Pour this mixture into the mixing bowl and combine. Beat on high for 4 minutes.

While the dough is beating, line your baking pans with parchment paper. Using this recipe, I can make 2, 13-inch pizzas, plus 3 pie-pan size pizzas. I freeze the small ones to use later. You could also make 2 cookie sheet-sized pizzas and a few pie-sized pizzas, or a few loaves of bread.

Once the dough is mixed, turn it out onto your parchment paper, dividing between the prepared pans. Use a spatula to spread the dough to the edges of the pans. Dough will be sticky, so you may oil your spatula if needed. Let the dough rest on the pans for 20 minutes. Preheat the oven to 400 degrees.

Prebake the crusts for 10 minutes and remove from the oven. Now top the crusts with your favorite toppings. Some of our favorites include:
Olive oil
Basil
Black olives
Green peppers
Pineapple
Daiya (dairy-free) mozzarella shreds or goat cheese

Bake the prepared pizzas for another 18-20 minutes, or until golden. Serve hot. The crusts taste great topped with honey like the famous restaurants use. Enjoy your family pizza night!

My Gluten-Free Story

Everyone has a story. That’s what the “U” part of My TEA CUPP Prayers is all about, Understanding our stories in the light of God’s Word.  When we know our stories, it helps us share our testimony with others, encouraging them to follow Jesus.

But today I want to share a different kind of story with you, this story is how God brought me healing in a unique way. I share this in hopes that my readers might find healing, too. This is My Gluten-Free Story.

I have always had tummy troubles.  Forever there has been a bit of pain in my stomach area.  When my two oldest kids were little, I was diagnosed with chronic pelvic pain and IBS.  This was after several mortifying doctor visits where I was poked and prodded.   When our third child was born, I had an epidural.  It was the only time I could ever remember not having pain in my abdomen.  Too bad those epidurals wear off!

As my children grew, I continued to have tummy troubles, trying various supplements and healthy shakes to no avail.  We were praying for more children, but never thought about how my condition could be connected to the ability to conceive.

Finally, in the summer of 2009 we were expecting again, only to lose that baby in a painful miscarriage.  That very autumn, we were expecting again, and also lost the baby.  The following June, we lost a third baby soon after conception.  “Why is all this happening?” I pleaded with God.

At the time, we were working at a church camp.  I was in charge of ordering food from Sysco.  In the fall of 2010, Sysco offered a webinar for its customers about gluten-free cooking.  I chose to participate, thinking it would help me order the right foods for our guests.

The Sysco webinar turned out to say very little about their products. Instead, it went into great detail about Celiac disease and gluten-sensitivity.  They discussed the symptoms of those with gluten-intolerance, including stomach pains and miscarriages.  They explained how the walls of the intestine are covered with little fingers called villi. These villi absorb the nutrients from food, providing nourishment to the body.  The problem for a gluten-sensitive person is the gluten wraps itself around the villi. This makes the person not absorb nutrients, thus causing miscarriages and other health issues.  The webinar also explained that a traumatic  event, such as a miscarriage, could cause a person who was only slightly sensitive to suddenly become gluten-intolerant.

So, there I sat in our camp office, expecting to make a shopping list for the dining hall. Instead, God gave me information to make some new healthy choices.  And that is what I did.  I went back to our house and announced to my family what I had learned, giving up delicious pizza crusts and cinnamon rolls forever, in favor of better nutrition for my body.

And guess what, it was exactly one year later, in the fall of 2011, that God blessed us with our fourth child.  God healed me and answered my prayers.

I still have tummy problems off and on, giving up dairy a few years ago, too. But I don’t catch as many colds, and I know that by eating gluten-free, I’m doing my part to keep healthy for serving the Lord.  And so I share my favorite gluten-free recipes with you, even some pizza crust that is thick and yummy like the real thing.  I pray that you will enjoy these recipes and be blessed with better health.

Hot Cocoa Cookies (GF & DF)

Hot Cocoa CookiesMy boys picked out these Chips Ahoy Hot Cocoa cookies from the grocery store the other day. Oh, the torture of having these delicious-looking cookies on my counter and not being able to eat them!

So, I set about making my own version of gluten-free, dairy-free Hot Cocoa Cookies.  Gluten Free Mama Flour is my favorite for cookie recipes.  Coconut oil and applesauce replace the butter, making these soft and dairy-free.  Instant pudding and baking cocoa add the hot cocoa goodness.

As soon as these were out of the oven, my family was eating them instead of the store bought ones!  A day later, only half the batch is left.  Next we will have to find a padlock for the cookie tin!  I hope you enjoy these cookies as much as we do.

Ingredients:
2 cups Gluten Free Mama Flour
(Almond blend or coconut blend, or your favorite GF flour mix)
3 T. dry instant chocolate pudding (half a 3.9 oz. box)
1/3 cup baking cocoa
1 teaspoon guar gum
1/2 teaspoon salt
1 teaspoon baking soda

1/2 cup applesauce
1/2 cup coconut oil
3/4 cup brown sugar
1/2 cup white sugar
2 teaspoons vanilla
2 eggs

1 cup Enjoy Life Chocolate Chips
Mini marshmallows

Directions:
Preheat your oven to 350 degrees.

In a large bowl, combine the dry ingredients:  Flour, dry pudding, baking cocoa, guar gum, salt, and baking soda.  Set aside.

In a stand mixer, beat together the apple sauce and coconut oil.  Add the brown sugar and white sugar and continue to mix well.  Next, pour in the vanilla and eggs, beat until creamy.

Add half the dry ingredients to the stand mixer, blending 15 seconds. Repeat with the remainder of the dry ingredients, blending until all is incorporated.  Sprinkle the chocolate chips into the mixer and blend for just a few seconds.

Line baking sheets with parchment paper.  Using a small scoop, scoop the batter onto the parchment paper, 12 to a pan.  Poke one or more mini marshmallows into the center of the cookies.  Bake at 350 degrees for 12-13 minutes.

Let cookies cool on pan for 2 minutes and then place on cooling racks.  Makes 36-40 cookies. Cookies will be moist and chewy, may be re-warmed in the microwave for 5 seconds to experience that authentic “hot cocoa” flavor.

Our little baker was quite eager to clean the mixing bowl for me.

Tofu Salad

img_0052This refreshing summer salad is packed full of protein and sweet fruit.  You can eat it as a salad, serve on toast, put it in wrap…so many ways to enjoy it!

Ingredients:
12-14 oz. package organic firm tofu, drained and diced
1-2 cups grapes, halved (or blueberries)
1/2 cup celery, sliced (optional)
1/2 cup pecans or almonds, (toasted 10 min. at 350 degrees, then chopped)
1/2 cup raisins
1 cup Organic Avocado mayo
1 tsp. curry powder
1/2 tsp. salt
1/2 tsp. ginger

In a large bowl, combine the tofu, grapes, celery, nuts, and raisins.  In a separate container, mix together the dressing: Mayo, curry powder, salt, and ginger.  Pour the dressing over the tofu mixture and toss to coat.  Cover and chill the tofu salad until serving time.  Garnish with lettuce leaves, serve alone or on gluten-free toast or wraps.  Delicious!

Yummy Breakfast Quinoa

Then he said to them, “This is what the Lord has said: ‘Tomorrow is a Sabbath rest, a holy Sabbath to the Lord. Bake what you will bake today, and boil what you will boil; and lay up for yourselves all that remains, to be kept until morning.’ ” Exodus 16:23. (NKJV)

Ingredients:
4 cups leftover cooked quinoa
2 cups coconut milk
1/2 cup chopped pecans
1/2 cup chopped apricots

Lightly grease a casserole dish with coconut oil.  In a mixing bowl, stir together the quinoa, pecans and apricots.  Transfer to prepared casserole dish.  Pour coconut milk over quinoa mixture, and cover the dish with glass lid or foil.  At this point you may put it in the fridge overnight, or bake it.  Preheat oven to 250 degrees.  Warm quinoa for about an hour.  Serve topped with additional coconut milk, cinnamon, maple syrup or honey.  What a yummy, high-protein breakfast treat!
